Art i wish i could copy but if i could i probably already would have
 and would not need a file labeled as such. Do you not just LOVE the elephant???? He would be hanging over our bed right now-love him.

Easy and Healthy

Well the no coffee kick lasted until exactly 9:30 this morning when I drank a small cup from the office coffee maker.

Okay back on the horse folks.

 

I wanted to share 2 easy recipes I made this week and Jason actually ate them and they were relatively healthy.

 

Grilled Pizza

1 roll of Pillsbury pizza dough

Homemade Pizza Sauce

Olive Oil

Mozz Cheese

Pizza Toppings

 

Homemade Pizza Sauce

I know buying a jar of spaghetti sauce is so easy but all the sodium and other strange flavors have me

 making a quick sauce that is easy and tasty-and you can hide all kinds of pureed veggies.

 

Sauté parsley(handful), garlic (2/3 cloves) and onions (half an onion) until soft

Dump in

1 can Tomato Sauce

1 can diced Tomatoes

Cook until the sauce is more chunky than saucey and add S&P and a little italain seasoning is you like

 

-I usually double/triple and then freeze for later

 

Roll out the pizza dough onto a large tray and cut in half. Stretch both pieces out just before thin enough for holes to start breaking thru.

Coat both sides with a little olive oil

 

Place on a medium/hot grill

Does not take long before the dough starts getting hard like flatbread.

Use large spatula to flip over to the other side.

 

Put on your sauce and topping and broil in the oven.

I know the Barefoot Contessa cooks hers on the grill until the cheese is melted but I think her grill assistant is better with the temp than mine-oh I mean ME!

 

Grilled Chicken and Rice Salad

 

Grilled Chicken

1 cup cooked Brown Rice

Juice of 1 lemon

Olive Oil-hmmm maybe 2/3 T

Green Onions

Tomatoes

Feta

Garlic

S&P

 

Toss the Brown Rice with the Lemon, Olive oil, garlic and S&P..like you were dressing a salad. Then add the green onions, tomatoes and feta.

Top the whole thing with sliced Chicken Breast.

Great combo of protein and carbs.

 

You really could do anything with this….add grilled veggies, olives, even sliced almonds and dried cranberries-hmm note to self.

I think this is a good meal for a book club or bible study night…easy to eat, fix and healthy. Shoot I don’t have a book club or bible study.

Coffee or SPORTTEA???

I am vowing to not drink coffee until February 28th…the day AFTER the marathon. So SportTea it is…I found this at the Health Food Store. It is actually not bad, has a slightly lemon taste to it. I think it looks like they produced it in 1978 and never changing the packaging but that is not what its about. Okay Cheers to SportTea!

Not a one trick pony

Not only does he serenade us with the guitar we have drum concerts as
well. In fact this morning we had to do a couple drum solos before he
headed off to school.

 Just houses i think are lovely...not necessarily houses i want to live in just ones i think are pretty. Check out the one with the green door-I do especially love that one.
Hmmm thinking about what file i share next.....could it be "decorations that involve sticks" or "decorations that include coffee filters"

18 and COUNTING

At 6:00am this morning it was 25 degrees feels like 15 degrees. BRRRR....Cold  But it was also long run day and i had to get my 18 miles in, my deadline is fast approaching and i had to get my miles in. I decided instead of doing a route in Mckinney where i could cheat and make it shorter i would run from my house in Allen to our starting point at Starbucks in McKinney, meet everyone then do a small loop and head home. So not only was i running 18 miles i was running to a completely different city. I was a little worried the first 4 miles were not all sidewalks, i had to run in the grass quite a bit and it was still very icy and the grass was frozen at that time in the morning.

But the wonderful thing was it felt GOOD...finally it felt good. So good in fact i barely messed with my ipod, i just let it randomly play whatever song it wanted to, usually i am messing with it the whole time. So i run the first 7.5 miles, meet the group and now i am darn cold....my teeth are chattering, my butt is cold and my fingers are in pain they are so cold. Sara runs with me for about 6 miles and we warm up and are feeling fantastic, we talk and chat the whole time until she heads back to the start and i head home. Now the miles are just knocking down and i am back in Allen and slowly but surely i finish my 18 miles and make it back to our neighborhood without cheating, hitchhiking or getting hit by a car. It even started snowing as i finished my last mile.

I may have looked interesting....old navy ballcap with lights in the brim, red neckgator folded over a couple of times around my hat and ears, bright blue jacket, aqua and white striped gloves, camelback running pack,red blinky light and my superhero tights-they are crazy tight black running tights that always make me feel like i am in the incredibles or something. So if you saw me running this morning in Allen or Mckinney, you may have thought i was homeless or an alien with all my lights on in the dark, but anyways thanks for not running me over.

These are the runs that make me remember why i like to run in the first place, this is why you do it. Makes you forget all the pain, frustration and agony and helps you focus on the task ahead-20 miles next week and Marathon 3 weeks from that.

Here are a few notes to self:
1. Do not put gatorade in a ziplock bag to squeeze into your water pack. It will break open and spill down your back side leaving you with an extremely cold and wet backside. not so fun
2. When it is freezing outside, that probably means your waterpack is going to freeze as well...ice crystals were coming out of the mouthpiece. Need a backup plan
3. Target gloves that are $1.50 for 2 sets are NOT WARM

Okay off to stretch and maybe lay down.

Happy Store Bought Valentines Day

I had big plans that Jackson and I were going to make homemade valentines this year. I really wish I could make that happen but if I am honest with myself I am pretty sure we are either going to give away store bought or nothing at all. So store bought-it is! Tiny Prints has the cutest valentines that you can personalize, so the valentines I bought are above and they will have Jackson’s name on them. They were very reasonable and I thought pretty cute. I ordered my Christmas labels from tiny prints and fell in love. You can still order today and get them by the 12th with regular shipping and they have a rush option as well. Maybe we will pair them with a homemade cookie or cakeball….oh wait I can buy those as well. hmmmm
